When you have peaches that have turned soft and not appetizing to eat as they are, this is a good recipe to use them and one that I have enjoyed eating during the summer.
½ cup shortening
½ cup granulated sugar
1 teaspoon grated lemon rind
2 eggs
1 cup cake flour ( I never used cake flour. I always used regular flour.)
1 teaspoon baking powder
¼ teaspoon salt (optional)
4 fresh peaches (Use more peaches if some parts cannot are be used.)
Topping: 1/3 cup sugar
½ teaspoon cinnamon
¼ cup chopped walnuts
Slice peaches into thin slices and put aside. Cream shortening, sugar, lemon rind and eggs until smooth. Blend in dry ingredients. Pour batter into a well greased and preferably lined 8 inch square baking dish and spread evenly. Line the peaches in rows covering all the dough. Mix the sugar, cinnamon and walnuts together and then sprinkle over all the peaches and dough. Bake at 350 degrees for 50 minutes. Do not turn over! To serve, cut individual pieces directly from the pan.
When serving, you can put a dollop of cream on the side if desired.
You may use 2 cups canned sliced peaches or 1 package frozen sliced peaches.
